1. Mint Chutney Sandwich :

- 6 slices white bread
- 1 sliced tomato
- 1 bunch mint leaves
- 3 medium green chilli
- 1 teaspoon sugar
- salt as required
- 5 tablespoon butter
- 10 pieces cucumber
- 1 1/2 handful chopped coriander leaves
- 2 clove garlic
- 1/2 teaspoon lemon juice
- 1/2 inches ginger
- To prepare the mint chutney spread, take a mixer or grinder and add a few fresh mint leaves, coriander leaves, green chillies, garlic cloves, lemon juice, pinch of sugar & salt to add taste.
- Blend the above ingredients to form a not so thick paste which could be easy to spread over the bread slices. Once prepared, put this aside in a bowl.
- Take slices of white bread or any bread in general, spread butter on one slice of bread. Spread prepared green chutney on the other slice.
- On a bread slice with chutney, add cucumber slices and tomato slices, put the other bread slice over it , to form a sandwich.
- Finally cut the prepared sandwiches into triangular shapes using a knife. Your deliciously tasting mint chutney sandwiches are ready!
2. Paneer frankie recipe

for paneer stuffing:
- 1 tbsp butter
- 1 cup paneer / cottage cheese (cube)
- 2 tsp oil
- 1 onion (finely chopped)
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder
- ½ tsp garam masala
- 1 cup tomato pulp
- 2 tbsp water
- ½ tsp salt
- ½ capsicum (sliced)
- 2 tbsp coriander (finely chopped)
frankie masala:
- ½ tsp kashmiri red chilli powder
- ¼ tsp turmeric
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp chaat masala
- ½ tsp amchur
- ¼ tsp salt
other ingredients:
- 2 wrap
- 2 tbsp mayonnaise (eggless)
- 2 tsp chilli sauce
- 2 tbsp cabbage (shredded)
- 2 tbsp carrot (grated)
- few onion (sliced)
- 2 tsp lemon juice
- 4 tbsp cheddar cheese (grated)
frankie stuffing preparation:
- Firstly, in a kadai, heat 1 tbsp butter and roast 1 cup cubed paneer.
- Roast until the paneer turns golden brown. Keep aside.
- Now add 2 tsp oil and saute 1 onion, 1 tsp ginger garlic paste.
- Saute until onions turn golden brown.
- Further, add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ¼ tsp cumin powder and ½ tsp garam masala.
- Saute on low flame until spices turn aromatic.
- Now add 1 cup tomato pulp and saute well. to prepare tomato pulp, blend 3 ripened tomatoes to a smooth paste.
- Saute until the oil separates from tomato paste.
- Further, add 2 tbsp water, ½ tsp salt and mix well.
- Add in roasted paneer, ½ capsicum and mix well.
- Cover and simmer for 4 minutes.
- Now add 2 tbsp coriander and mix well. paneer stuffing ready.
frankie masala preparation:
- Firstly, in a small bowl take ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp chaat masala, ½ tsp amchur and ¼ tsp salt.
- Mix well and the spice mix is ready.
Frankie preparation:
- Firstly, take wrap or chapati and wrap if required.
- Add 1 tbsp eggless mayonnaise and 1 tsp chilli sauce. Mix and spread uniformly.
- Now add in 2 tbsp prepared paneer stuffing and spread slightly.
- Top with 1 tbsp cabbage, 1 tbsp carrot and few onions.
- Sprinkle in prepared frankie masala and squeeze 1 tsp lemon juice.
- Also, grate 2 tbsp cheddar cheese uniformly.
- Now roll tight without allowing the stuffing to come out.
- Tuck the ends make it well secured.
Finally, cut into halves and enjoy paneer frankie.
3. Uttapam
Uttapam is a traditional South Indian breakfast recipe. Preparing uttapam often requires overnight fermentation of the batter but there are a few cheat recipes, where you can prepare this dish instantly without the overnight hussle. for batter:
- 1 cup rava / semolina / suji (coarse)
- ½ cup curd
- ¾ tsp salt
- ½ cup water
for toppings:
- 1 onion (finely chopped)
- ½ capsicum (finely chopped)
- 1 carrot (grated)
- 1 tomato (finely chopped)
- 2 tbsp coriander (finely chopped)
- 1-inch ginger (finely chopped)
- 1 chilli (finely chopped)
- few curry leaves (chopped)
- ¼ tsp salt
- Firstly, in a large bowl take 1 cup rava, ½ cup curd and ¾ tsp salt.
- Mix well making sure the curd is combined well.
- Further, add ½ cup water and mix well, adjusting consistency.
- Rest for 20 minutes or until the rava absorbs well.
- Check for consistency adding more water if required.
- Now prepare the vegetable toppings, by taking 1 onion, ½ capsicum, 1 carrot and 1 tomato.
- Also, add 2 tbsp coriander, 1 inch ginger, 1 chilli, few curry leaves and ¼ tsp salt.
- Mix well making sure everything is well combined.
- Now pour the rava batter into a small uttapam.
- Top with a tbsp of prepared toppings and press gently.
- Pour 1 tsp oil around the uttapam.
- Cover and cook for a minute or until the base is cooked well.
- Flip over and cook both sides.
Finally, enjoy instant rava uttapam with tomato sauce or coconut chutney.
4. Pasta recipe
Talking about quick vegetarian recipes and not mentioning pasta would be a disrespect. The best part about this versatile, simple-to-prepare vegetable pasta is that any vegetables you choose to add will work well. Exotic vegetables are not necessary because ordinary vegetables also go well with this spaghetti. This recipe may be made with any type of pasta, which is one of its best features.

- 250 gm pasta macaroni
- 1 teaspoon garlic
- 1 onion
- 1 carrot
- 1 teaspoon chilli flakes
- red chilli powder as required
- 1 tablespoon tomato ketchup
- 1 tablespoon red chilli sauce
- 1 teaspoon ginger
- 2 tomato
- 1 capsicum (green pepper)
- 1 green chillies
- salt as required
- 1/2 teaspoon garam masala powder
- 1 1/2 teaspoon soy sauce
- 1/2 teaspoon oregano
- Firstly boil the pasta, in a deep bottomed pan by adding a pinch of salt and 2 tablespoons of oil to the water.
- Chop all the required vegetables that you want to add into your pasta. Side by side also chop ginger and garlic.
- Add some oil in a preheated pan, add ginger and garlic to it first then add all the veggies, onions and chillies, saute them till they turn golden brown in color. Lastly add tomatoes along with salt.
- Now, add in the sauces and red chilli powder. Cover and let it cook for 3 minutes and then add the pasta.
- Now add the oregano, chilli flakes and Garam masala and give it a good mix without breaking the pasta.
Your vegetable pasta is ready to be served!
5. Matar Pulao
Matar pulao is super easy to cook and a go to dish during winters , cooked almost in every household. This could serve as one of the best options as a quick vegetarian recipes and easy to prepare vegetarian meal.

- 1 tbsp ghee / clarified butter
- 1 tsp cumin seeds / jeera
- 5 cloves / laung
- 1 bay leaf / tej patta
- 1-star anise / chakr phool
- 1-inch cinnamon stick / dalchini
- 10 black pepper / kali mirch
- 3 cardamom / elachi
- 1 medium sized onion (thinly sliced)
- 1 small green chili (slit lengthwise)
- 1 tsp ginger garlic paste
- 1 cup peas / matar (fresh / frozen)
- 1 cup basmati rice (soaked 30 minutes)
- 1.5 cups water
- salt to taste
- Firstly, in a cooker, heat ghee and add cumin seeds.
- Further add cloves, bay leaf, star anise, cinnamon stick, black pepper and cardamom. saute till they turn aromatic.
- Furthermore, saute onions till they turn translucent.
- Also saute green chili and ginger-garlic paste.
- Additionally add green peas and saute well. either add fresh or frozen peas.
- Further add basmati rice soaked for atleast 30 minutes and saute gently.
- Now add 1.5 cups of water. always add 1.5 cups of water to 1 cup of basmati rice.
- Additionally add salt to taste and mix well.
- Pressure cook for 2 whistles on medium flame.
- Once the pressure releases from the cooker, gently fluff.
- Finally, serve peas pulao or mattar pulao with raita or with paneer curries.
